Source: Shodhganga: Dietetics and culinary art in ancient and medieval IndiaPuryāla (पुर्याल) refers to a food-preparation with meat, according to Someśvara’s Mānasollāsa (chapter 3), and is commonly found in literature dealing with the topics of dietetics and culinary art, also known as Pākaśāstra or Pākakalā.—Meat eating in India is as old as Ṛgvedic period. [...] Someśvara describes in detail the method of preparing a number of meat dishes like śuṇṭhaka, cakkālikā, kavacandi, puryāla, bhaḍitraka, kṛṣṇapāka, and kośali in the third chapter of his text Mānasollāsa.
