Source: Shodhganga: Dietetics and culinary art in ancient and medieval IndiaAulukī (औलुकी) refers to a commonly used source of animal fat according to the Aṣṭāṅgasaṅgraha Sūtrasthāna VI.113-114, and is commonly found in literature dealing with the topics of dietetics and culinary art, also known as Pākaśāstra or Pākakalā.—Aṣṭāṅgasaṅgraha, the medieval period text states that the oil extracted from sesame is considered the best and that from safflower is the worst. The commonly used animal fats as used in food were aulukī type fish, pig, cock and pākahaṃsa.
Āyurveda (आयुर्वेद, ayurveda) is a branch of Indian science dealing with medicine, herbalism, taxology, anatomy, surgery, alchemy and related topics. Traditional practice of Āyurveda in ancient India dates back to at least the first millenium BC. Literature is commonly written in Sanskrit using various poetic metres.
