Atyamla (अत्यम्ल) refers to one of the five types of “curds” (dadhi) according to the 17th century Bhojanakutūhala (dravyaguṇāguṇa-kathana), and is commonly found in literature dealing with the topics of dietetics and culinary art, also known as Pākaśāstra or Pākakalā.—In dadhi-prakaraṇa, author classifies the curds into five types [viz., Atyamla] depending on their stages of fermentaion as well as taste.
